That Tino Sargo, what is that, huh? Sounds like some kinda fish, maybe? I heard folks talkin’ ’bout it, sayin’ it’s good eatin’. Well, I’ll tell ya, old timer me like me some fish. Ain’t nothin’ better than a good fish fry, you know what I mean?
So, this here Tino Sargo, if it’s a fish, I reckon it’s gotta be cooked right. Can’t just throw anythin’ in a pan and call it dinner. Gotta know what you’re doin’. Fish, that’s what I know. My whole life. My family used to fish in the river, catch all sorts of things. Some good, some not so good.
Now, if you wanna cook fish, you gotta have the right stuff. That book, what’s it called? “Fish: The Complete Guide to Buying and Cooking”. Sounds fancy, but I bet it’s got some good stuff in there. They say it makes cookin’ fish easy. Well, it ain’t rocket science, but it ain’t always easy neither.
First thing, gotta get yourself a good fish. Gotta get it fresh. Maybe go out there and catch it yourself, if you know how. If you are buying, you better make sure its fresh. Else just toss it out. Tino Sargo, I wonder where you find that? Is it from the river? The ocean? Maybe somebody knows.

- If you want to fry it, need some flour.
- Oil, gotta have oil to fry.
- Salt and pepper, that’s a must.
If you are frying the fish, that Tino Sargo or any other fish. If you got some flour, you are good. If it’s a good fish, like that Grouper from Florida, you don’t need much else. Just flour. Maybe some salt and pepper. Fry it up in some hot oil. Golden brown, that’s what you want. Crispy on the outside, soft on the inside. Oh boy, that’s good eatin’.
Now, they got all these fancy ways to cook fish these days. Grilled, baked, pan-fried, broiled. Whatever that is. I reckon they all taste alright, but nothin’ beats fried. My mama used to fry fish all the time. She’d catch ’em, clean ’em, and fry ’em up. Best fish I ever had.
If you are cookin’ fish, gotta make sure it’s cooked all the way through. Don’t want no raw fish. That ain’t good for ya. That Tino Sargo fish, I bet it’s gotta be cooked just right. Can’t be too dry, can’t be too mushy. Gotta be just right.

They say there’s seven ways to cook fish. Seven! Who needs seven ways? Just fry it up, that’s all you need. Simple and good. I bet this Tino Sargo can be fried. I gotta find out.
Some folks like to put all sorts of things on their fish. Sauces and spices. I don’t know ’bout all that. Good fish don’t need all that fancy stuff. Just a little salt and pepper, maybe a squeeze of lemon. That’s all you need. Unless the fish is bad, then you gotta hide the taste with other things.
Florida, they got good fish down there. That Grouper, they say it’s real good. Mahi-mahi too, that’s another one. They say it’s one of the best fish to eat in Florida. I wonder if this Tino Sargo is from Florida? Maybe it’s one of those best fish from Florida, too. I gotta ask somebody.
When you fry fish, gotta get the oil hot. Not too hot, though. Don’t want to burn the fish. Gotta find that sweet spot. That’s what they say. Takes some practice, I reckon. I wonder what’s the best temperature for this Tino Sargo?
Fish and sides, they go together. Like peas and carrots. Fries are good with fish. Or hushpuppies. Those are good. Cornbread too. Gotta have some good sides with your fish. What goes well with Tino Sargo? Need to find out. Maybe some greens? Collard greens, maybe. Or some taters.
If you catch your own fish. There are good places to fish. Reefs are a good place. I don’t know much ’bout that, though. We always fished in the river. But I bet you can find this Tino Sargo near a reef. Maybe.
I reckon I’ve said enough about fish for now. That Tino Sargo got me thinkin’. I’m gonna go find out more about it. Maybe I’ll even try some, if I can find it. If it’s as good as they say, I might just have a new favorite fish. But it’s gotta be fried, though. That’s the only way to eat fish.
Maybe there are some tricks to frying with flour. If you are cooking a lean fish, like that Tilapia or Cod. I heard of those. Never had ’em, though. I bet they’re alright. Probably taste good fried. Everything tastes good fried.
Anyways, I’m gonna go now. My stomach’s startin’ to rumble. Thinkin’ ’bout all this fish got me hungry. Time for some supper. Maybe I’ll fry up some fish tonight. If I can find that Tino Sargo, I’ll let ya know how it is. If not, maybe some catfish. Catfish is always good.
